Ramen and more; How Snack Korner is Bending the Norm of the Lincoln Food Scene
MinSoo Park is on a mission to bring a taste of Korean culture to downtown Lincoln Nebraska. His latest venture, Snack Korner, located on the corner of 13th and P street, serves up a delicious mix of international flavors.

“This kind of business is everywhere in Korea - I want to bring that idea to Lincoln for people to enjoy,” Park says. Fusing elements of a convenience store, a coffee shop, and a lunch spot, Snack Korner offers a truly unique experience.
Positioned directly next to the Rococo theater, the high foot traffic of college students and the bustling downtown workforce give Snack Korner a chance to become a standout attraction in the downtown Lincoln food scene.
A “do-it-yourself store,” Snack Korner has a clear favorite: build your own ramen bowls. With 103 flavors of ramen to choose from and 20 toppings, there are over a million unique ramen bowl combinations. “I have never heard of anyone who has more ramen than me,” Park proudly shares.
You can eat there daily for the rest of your life and never get the same bowl twice! Beyond ramen, Snack Korner also offers a variety of multicultural treats like shrimp chips, sushi, and mochi, making it a one-stop shop. Multiple self-serve coffee machines provide a range of drinks—lattes, cappuccinos, macchiatos, and more. Upstairs features tables and a small dining room providing a work setting resembling a coffee shop.
Park has collaborated with multiple local businesses such as Kuro Neko Desserts, Freezing Thai Rolled Ice Cream & Bakery, and The Mill. Instead of competing, Park showcases the work of other local businesses. Mochi from Kuro Neko, rolled ice cream from Freezing Thai, and coffee from The Mill are all staple items at Snack Korner. “We all have a good relationship. It's nice to help share their work and meet other business owners,” Park stated.
Through these collaborations with neighboring businesses, Snack Korner becomes a hub for locally made tastes. Snack Korner brings a fresh twist of flavor to Lincoln’s food scene, combining the excitement of building your own ramen bowl with a wide variety of international snacks; Snack Korner invites locals to explore a diverse and flavorful cuisine.
Whether you are building a ramen bowl with endless combinations or looking for a fun snack, Snack Korner has something unique for everyone. As Park puts it “more than selling the food, I am selling the fun.”
Snack Korner is open 9am - 8pm weekdays and 10am-7pm weekends.
