Celebrating 10 Years of the Hub Cafe


For the past decade, Hub Cafe has been guided by a simple yet enduring belief: local ingredients matter. 

What began as a vision rooted in Lincoln’s local food system has grown into a community-centered café that brings together friends, food, and a shared appreciation for thoughtful, sustainable dining.

Originally founded by owners Doug and Krista Dittman in 2016, Hub Cafe was created to serve as more than a place to eat. It was designed as a gathering space, a true hub, where community, conversation, and cuisine intersect. 

Jake and Crystal Thiessen purchased the business in 2023. 

Inspired by the farmers, growers, and artisans who define our region, Hub Cafe proudly reflects the strength and integrity of Lincoln’s local food network.

Seasonality and intention continue to shape the menu. Executive chef and co-owner Jake Thiessen brings a refined yet approachable perspective to eco-conscious cuisine, offering fresh interpretations of familiar favorites. 

Each dish is driven by the availability of local ingredients, ensuring that flavor, quality, and sustainability remain at the forefront. This commitment allows the menu to evolve naturally throughout the year, highlighting the best of each season.

Equally crucial to Hub Cafe’s identity is the atmosphere cultivated within its walls. Under Crystal Thiessen’s leadership, Hub has grown into a welcoming space where guests feel encouraged to linger, connect, and return. 

From daily regulars to visiting cyclists, families, and friends, Hub Cafe has become an integral part of the rhythms of the community it serves.

Over the past ten years, Hub Cafe has been shaped by many hands and hearts. We extend our sincere gratitude to the local producers who supply our kitchen, the dedicated team members, past and present, who bring care and professionalism to every service, and the guests who have supported our mission from the beginning.

Hub Cafe remains committed to honoring local ingredients, fostering meaningful connections, and serving food that reflects both purpose and passion.
